Catching Up...February 2010

Okay so I know it has been a long time since my last post, so I promise I will do better. :) Here is what happened in the Pemberton household the month of February.

We made banana blueberry pancakes with the fresh blueberries we picked last summer. Emily loves blueberries and I even made some Blueberry Zucchini Bread last week. You can get the recipe here.

Emily also tried out a boat as a shoe. Very cute, but not so easy to walk in.

We helped her build her first fort! It was a fun time just crawling inside with her and laughing. If you look in the lower left corner of the picture you will see several remotes. These remotes have now gone missing...we will pay a reward to anyone who can return the remotes (we think they made there way to the dump via a small girl we will not name).

Emily's first pigtails. She will not keep her hair up for the life of me, but it had managed to get long enough to go in pigtails, so they lasted about as long as the photography session.

Polar Bear Plunge 2010

Saturday February 13, 2010 marked the 12th year the event was held at the Prairie Creek Campground, Beaver Lake. The event raises money for Arkansas Special Olympics. More than 200 participants took part in Saturday's plunge, raising more than $37,000. Arkansas is the only state in which participation in Special Olympians comes at no financial cost to the athletes. The organization covers uniforms, meals and lodging when athletes travel to competitions. Charles and 4 other colleagues participated in the plunge and raised $605. The estimated temperature of Beaver Lake water was 42 degrees at the Prairie Creek Swim Area.

Happy Father's Day Weekend

We had a great weekend! Christy came to visit and we stayed so busy. We went to Carthage, Republic, Ozark & Springfield, MO on Saturday. We went to eat at Lambert's for lunch and also visited the Bass Pro Shop. They have done a lot of renevations and will be doing more throuh the summer. One part of the building now looks like you are walking under water in a lake with bass fisherman and duck hunters. I will be excited to go visit again when they have completed. I didn't get any pictures this time, but I will be sure to take some next time. Sunday we went to pick blueberries and had a trip to the lake to cool off.

Wilson's Creek National Battlefield - Hiking to Gibson's Mill which was no longer there. It was very hot and we were very disappointed after our 1 mile trip. Emily also got her very 1st tick which we discovered when we were at the Bass Pro.

Baby Legs

I was on Make It and Love It awhile back and ran across her tutorial on making baby legs. Now that Emily is old enough to crawl I decided it was time to make her some. I got all of these for about $1.00/pair instead of paying $12.00/pair on Baby Legs; if you don't have the time or patience and have a money tree out back go ahead and purchase them online, but if you want to be thrifty and have 10 minutes you can make your own. Here is my tutorial on how:

Here are all of the knee high socks I bought. I would have bought more, and probably will go back, but Charles made me leave.

Cut the tops off at the heel.

Cut the heel from the foot part.

Cut the toe from the foot part.

Turn the leg part inside out and make cuffs from the left over foot part.

Insert the cuff into the leg section.

Sew them together.

Flip right side out.And put them on.

Aren't they adorable?

Garage Sale Super Find

We went to some garage sales on Friday because Charles was off work. This was our greatest find...Toysrus.com $149.99, Wal-Mart $129.92 & Target $119.99...Garge Sale $5.00!!!

Yes we got this awsome steal for only $5.00...it was very dirty, but with the help of a wonderful husband, some bleach water, and a power washer, we were able to restore it to almost brand new. We also got her some clothes at another sale, but this was the biggest find ever!

I inherited my Great-Grandparents China and after setting in Emily's room for almost 8 months it has now found a home. Charles and I both agreed on this "bookcase" at Riverside Furniture, but doesn't it make a wonderful china cabinet? We don't have room in this house for it in the dining room, so it is in the living room, but it matches our other furniture very well. Thanks grandma for the china I LOVE IT! If you get to come for Thanksgiving we will have dinner on it. Love you.

Race for the Cure

Emily and I attended the Race for the Cure on April 25th. I signed her up with PBS so that I could get her a shirt.

I decided to turn her shirt into a onesie. I think it turned out rather cute.

I also got her some pink rubber duckies when we were walking around to all of the booths.

She also go a Eat Mor Chikin cow. She was the cutest baby at the race. (ok so maybe I'm partial)

We are taking Emily to the Walton Fitness Center for Baby and Me Swimming Classes. She loves the water and has lots of fun swimming. The water is very enjoyable because it is heated to a comfortable 90 degrees...maybe it is more relaxing for the adults.

I love him for being quite the handyman to have around. I will say there is a lot of things that he can do, but he is no plumber, that is for another post, but here are a few pictures of some things that he has done around the house lately; and sorry ladies I am not loaning him out. As you see below I got a new washer and dryer a year ago and he built this wonderful stand for the two of them in my utility room. He did this for me when I was pregnant so that I wouldn't have to bend over so far. Ah...How Sweet.

Okay so I don't know if this is the safest way to transport a baby, and I wouldn't recommend this to all, but Charles found a new way to carry Emily while he is doing things around the house; he can't bend over if he drops anything or if he needs to pick something up, but what an invention.

I took my first big girl bath on Sunday, October 5, 2008.

I loved taking a bath it was very relaxing, I think I get this from my mom because she loves taking showers. I then got a massage with baby lotion, oh what a terrible life I have.

Okay so if I could attach a scratch and sniff to the page I would so that everyone could experience the great aroma of the Apple Butter. Thanks to Charles and three sliced up fingers he managed to make it through the apples that we picked at David and Merrie's house. For the past 3 years or so we have made apple butter for the family for Christmas, so again this year everyone get ready for some good ol' apple butter. Here are some pictures and the recipe for our crock pot apple butter. Enjoy!

8 cups of apples (grated or blended in a food processor)

2 cups brown sugar

1/2 tsp allspice

1 tsp cinnamon

7 oz box of red hots optional (for Red Hot Cinnamon Apple Butter)

3 cups apple cider

Cook in crock pot until dark brown and most of the liquid is dissolved.

Can while apple butter is still boiling in the crockpot. Put on lids and turn upside down so the lids will seal. Store and eat on toast or on a peanut butter sandwich.

Well, Amanda is feeding the baby, so I thought that I would try and update the blog. She weighed 8lbs 3 oz and is 21 1/4 inches long. She was born at 10:35 pm on September 11, 2008. We haven't decided on a name yet, so you will just have to settle for pics for now.

Okay so I am finally getting around to posting a couple of pictures. I know I should have done this a long time ago, but why do it now when you can wait til the last minute.

Here is a picture of the baby's crib and bedding. Thank you Sharon for the crib and Shirley, Angela and Toni for the bedding. I love it and can't wait to see her sleeping peacefully.

This picture doesn't have anything to do with the baby, but Charles picked this tomato in our garden. Isn't it the cutest thing you have ever seen? He put it in his salsa we made on 9/4/08.

Fresh Garden Salsa

5 quarts ripe tomatoes
5 big onions (or more)
18 jalapeno peppers
1 cup white vinegar
1 1/2 cup sugar (more or less)
8 teaspoons canning salt
6 teaspoons garlic (minced or dried - you can add more if you like)
chopped cilantro (fresh or dried - just to you liking)

Drop tomatoes in boiling pot of water 15 - 20 seconds. Core and slip off peel. Run tomatoes, onions & peppers through food processor. Mix all ingredients together and bring to a boil. Turn down heat and simmer for and hour or so to cook down a little. Taste. Pour salsa into hot clean jars, 1/2 inch headroom. Hot water bath pints 10 min - quarts 15 min.

We would like to thank Merrie Rivers for the recipe. We tasted ours before it boiled and decided it would be great. We didn't taste it again after boiling. We also made ours chunky, but you can blend down in the food processor to your liking. We also boiled ours for about 1 1/2 hours to cook down more of the liquid for extra chunky. However you like it doesn't matter just add and take away until you find your own perfect recipe. Ours made 5 quarts and 1 pint.

If you don't understand my blog title please visit my mother's blog @ http://www.kitchgarden.blogspot.com/ for clarity. I have taken pictures of my garden and some of the fruits of our labor so that my mom can see what our garden looks like. I enlisted Charles to build me some garden boxes that had some architectural detail. I found a couple pictures online and showed them to him. He thought okay no problem and we were off to Lowes to purchase some wood. What he didn't realize is that it would take him two weekends to build my boxes. I guess I should say "Thank You!" everyday, but wouldn't you agree that they turned out great? Then I gently informed him that I would actually like two more 4x4 beds for next year. Oh well just another project to add to the list. Hope you enjoy!

Okay so I know it is about time I post something, but you know how things go. Well I guess I will start with the puppies; or as we know them as Larry, Moe & Curly or "The Chicklets". Daisy had them on our 2nd anniversary. What a gift! Charles is going to have a hard time trying to top this. They are 4 weeks old today. Here are a few pictures of them so you can see how much they have grown. The first two where taken when they were born.
